Cappucino Almond Cupcake



I love coffee so much so yesterday i baked cappuccino cuppies. Got the recipe from Gina Steer (Chocolate & baking) n just bought the book last weekend at MPH.

Cappuccino Cupcake

Ingredient: [18 cups]
125gm butter
125gm caster sugar
2 medium eggs
1 tbsp strong black coffee mix with 2 tbsp hot water (i use nescafe)
150gm self-raising flour
2 tbsp cappuccino chips
2 tbsp almond flakes


Method:
1-Preheat the oven to 180'c 10 minutes before baking.
2-Cream the butter and sugar together until light and fluffy.Then break the eggs, mix until they are incorporated.
3-Beat in the black coffee.
4-Sift the flour into the mixture,then with spatula gently fold in the flour.Finally add the cappuccino chips into the mixture.
5-Place spoonfuls of the mixture into the muffin cases,sprinkle the almod flakes on top of the cake.
6-Bake in the preheated oven for 20-25 minutes.


Weee```` i like to see my cuppies fluffy in the oven!
