Vanilla cupcake with cream cheese & strawberry filling.



Vanilla cupcake is so flat if we don't frost it with buttercream,chocolate ganache or cream cheese. I was thingking to fill inside the cuppies with my strawberry filling and cream cheese as part of my "experiment" ;-P. So happend when i shopping at Bake with Yen's shop, i found the specific nozel for that porpose. Yippeee! ;-D So, last friday i baked these cupcakes for my nephew and niece's birthday. Then i decorated the cuppies with edible image of Dora the explorer and Ultraman. The flavor was wonderful! I like cheesy taste mix with sweet  n sour taste of strawberry filling.

Basic vanilla cupcakes recipe: [ 22 cups -medium size]
Ingredients:
225g self-raising flour
225g caster sugar
225g soft unsalted butter
4 eggs
1 teaspoon real vanilla extract
Method:
1- Preheat the oven to 180ºC and line a 12-muffin pan with paper cases.
2- In a medium bowl, cream the butter and sugar until creamy, beat in the eggs one at a time.
3- Then add the vanilla extract and flour.
4-  Bake for 15-20 minutes or until the cupcakes are cooked and golden on top. As soon as bearable, take the cupcakes in their cases out of the tin and let cool, right way up, on a wire rack. Decorate the cupcakes after they’re completely cool.

Worth-it making those sweet treats!


Fatiha Arissa is 2!, my cutie niece. I love her so much!
Last friday was a memorable day for me. It was first time i making cakes for my nephew and niece's birthday.I'm also make my first ever chocolate homemade! So that's the other thing that kept me busy last week. I make two devil's chocolate cakes frosting with cream cheese and chocolate ganache. I'm also baking 60 cuppies and i decorated with edible image onto the cupcakes. I choose Dora the explorer and Ultraman image for those cuppies. For sweet tooth i make chocolate candies, butter cookies ( actually i want decorating the butter cookies with royal icing but i don't have enough time! *sigh*) and i'm also make chocolate rice bars. Well, it was tired but i'm very happy to make others happy! I want to thanks my sisters Maryam and Ain because they both help me in the kitchen huhu...
Birthday boy, Fateh is 1 year old this year!. My nephew and brother to Fatiha ;)

I don't have enough time to do character using fondant for Fatiha's cake. So i just did the fonts and decorated onto the chocolate cake ;)

My first ever homemade chocolate! I adapted the recipe frm food blog.

For sweet tooth, i make chocolate rice. Simple recipe frm food blog ;-)

I've baked this cake 3rd times on last week. Thanks God cuz the 3rd cake turn out nicely frm oven. Glad that i can make this beautiful cake for my beautiful niece ;-)

When east meet west ;-) Nasi Lemak Ungkap vs Blackpaper Tuna Puff


The daisy so pure...so my heart..but he didn't appreciate me..goodbye loser...
This morning i and my housemates Kak Lin doing so called 'west meet east' meal for our breakfast hehe...Tuna blackpaper puff and nasi lemak ungkap. The puff is easy recipe to make for those super mom or ladies out there. Tastes yummy and u can make variety filling like souvary or sweet. The nasi lemak recipe was from my mom.  Why i put the word 'ungkap'? because it's special hot n spicy dish for Javanese in Johore or Selangor at Malaysia. I learned to make  sambal Ungkap from my housemate kak Lin. It tastes like rendang but there's no coconut milk in the ingredient. So early in the morning we went to the near wet market to buy some stuffs to prepare the dishes. Then i saw white daisy at uncle Rajo's shop. I bought it because i like any white colour flower huhu...i decorated those white daisy in my dining table and i feel so hapi to see them..make my day!


-Blackpaper Tuna Puff-

Ingredients: ( For pastry)
1 pack of ready made pastry [makes 10 pieces]
1 egg yolk [to decorate]
parsley flakes [to decorate]

How to make:
1-Pre-heat oven at 160'c for 10 mins.
2-Cut puff pastry sheet to 2 pieces, A and B. Make horizontol line on the 'A' pastry using knife.
3- Spoon tuna filling on B piece, thn use folk to press down edge of the pastry.
4-Brush egg yolk on the pastry and sprinkle parsley flakes.
4- bake for 15 mins or until golden brown.

I used 'KAWAN' brand puff pastry

Use folk to press down the edges of pastry



-Tuna Blackpaper Filling-
Ingredients:
1 can of tuna flakes
3 spoonful of mix vegetables
2 spoonful chopped onion
1 spoonful ground blackpaper
1 spoonful parsley flakes
1 spoonful paprika flakes
1 spoonful olive oil/1 spoonful butter

Method:
1- Saute the onion with ground blackpaper.
2- Add tuna flakes, mix until well combine.
3- Add parsley and paprika flakes, stir it.
4- Lastly add mix vegetables.


NASI LEMAK UNGKAP

Ingredients: (Coconut rice)
2 cups fragrant rice
1 cup milk coconut
1 cup water
1 inch ginger, roughly chopped 
1/2 onion,roughly chopped
a pinch of salt

* Add all ingredients in rice cooker n boil it until cook. When rice is done,gently fluff rice with fork.

SAMBAL UNGKAP

This is my previous sambal Ungkap. I cooked with beef .
Ingredients:
2 fresh lemongrass stalks, minced
10 bird chilies/cili padi [ if don't like hot, just leave it]
4 shallots
4 cloves garlic
1/2 inch turmeric
500gm fried chicken liver or chicken/beef or any seafood
3 spoonful tamarind juice
1/2 cup water
4 spoonful cooking oil
salt
sugar

Method:
1- Grind the first 5 ingredients.
2- Soute ground paste for 1-2 minutes or until fragrant. Add salt and sugar.
3- Add chicken liver, stir-fry until the chicken liver is cooked.
4- Add tamarind juice and water.Cook until the sauce slightly thickened.

Devil's Chocolate Cake

Today was great saturday. U know why? because i successfully baked my first ever devil's chocolate cake n i got already my dslr camera yesterday. Alhamdulillah..n now he's in action already [my Bb] ;-P
Despite my heart still hurt n now i was torn into pieces but i managed bake a delish cake. It was great moment while i'm baking smthng, i forget my sadness and my focus only to make a nice and wonderful sweet treat ;-)


I adapted this recipe from this blog - Goodfood. At first so scared if it wont turn out well. But thanks god, my cake baked nicely in the oven and i managed to decorate it with yummy chocolate ganache,creame cheese n some chocolate flakes and almond nibs.
So here the recipe, n i tell u guys, u wont regret it! U all sure will like 'em ;-D

u must use a good quality baking chocolate thn only it taste divine and delish ;)

DEVIL'S CHOCOLATE CAKE

Ingredients:
2 cups all purpose flour
1 cup cocoa [ i used Van Houten/Hershe]
11/2 teaspoons baking soda
1 teaspoon baking powder
1/2 salt
1/2 stick/114 gm butter,softened [ unsalted butter]
1 cup brown sugar
1 cup white sugar
3 large eggs
11/2 teaspoons vanilla extract
11/2 cups buttermilk [i mix 1 cup fresh milk with 3 tsp lemon juice,stir until well blend n let it set for 10 mins] or u can use sour cream/yogurt
1/2 cups warm water

How to make ;-)
1- Preheat oven to 350 degree f or 180'c.
2- Butter or spray 2 - 9x2 inch round cake pans.[ Mine, i used one only- 23 cm cake pan].
3- Sift flour,cocoa,baking powder,baking soda n salt together in a large bowl - set aside.
4- Using an elektric mixer, fitted with a paddle attachment, beat butter n sugar together until creamy. Scrape down bowl with a rubber spatulla.
5- Add eggs one at a time, then add vanilla n beat on high speed until light n fluffy.
6- Turn mixer to low speed n add dry ingredients , alternatively with liquid ingredients. Scraping as needed between addition. Mix until batter is smooth with no lumps.
7- Pour the batter equally into prepare pan.
8- Bake for 35-45 mins at 160'C [my oven small size - it's depend on ur oven size]



-CREAM CHEESE FROSTING-
Ingredients:
250gm cream cheese [room temp]
125gm butter [room temp]
1 cup icing sugar - sifted
1 tsp vanilla
juice of a squeezed slice of lemon, to rid the cheese taste.

Method;
beat cream cheese n butter, just until creamy add the icing sugar, vanilla and lemon juice.



-Chocolate Ganache-
200 ml double cream
250gm dark chocolate,chopped finely
a pinch of salt

Method:
1- In a double boiler, warm double cream until just at boiling point, add chopped chocolate,salt n stir.
2- When chocolate is melted remove frm the heat n continue stirring until well mixed.
3- Cool cake completely,slice cake through the middle to make two layers, spread the creame cheese frosting onto each layers n pour cool ganache on top of the cake.

Lemak Udang dan Terung

Resepi ini diolah dari resepi asas masak lemak. Masakan kampung yang pasti membuat anda makan dengan berselera. Nak umph lagi makan bersama ikan masin perah limau. Mak mertua lalu pon takkan perasaan ;-P

Bahan-bahan:
500 gm udang (saiz medium/besar)
2 batang terung (saya gunakan terung panjang)
1 cawan pati santan + 2 cawan santan cair
1 btg serai*
4 ulas bawang merah*
3 ulas bawang putih*
1 sdb ketumbar*
1sdb lada putih *
sedikit kunyit hidup *
sedikit belacan *
3 biji cili padi (jika gemar masakan pedas boleh letak banyak)*
garam

Cara memasak:
1- Tumbuk/kisar semua bahan yang bertanda *
2- Masukkan bahan yg telah dikisar ke dlm periuk berisi santan. Kacau sebati.
3- Masukkan udang dan masak di atas api sederhana.
4- Sentiasa kacau supaya santan tidak pecah minyak.
5- Apabila telah mengelegak masukkan terung yg telah dipotong-potong.
6-Akhir sekali masukkan garam dan sedikit gula (jika suka-untuk menggantikan penambah perisa)




Crunchy Cinnamon Roll

Today i feel much better. What will be will be...if he doesn't want me to be his guardian angle than i've to accept it. Ok stop about my emotional feelin ( my sista likes to teasing me EmO-EmO [O_o] when i'm down hehe...)
Today recipe was adapted from fellow blogger. He used cinnamon to make the treat tasty. Before that i want to share with u you a little bit about cinnamon. There are 10 benefit if we take cinnamon in our daily food.


1- Studies have shown that just 1/2 teaspoon of cinnamon per day can lower LDL cholesterol.
2- Several studies suggest that cinnamon may have a regulatory effect on blood sugar, making it especially beneficial for people with Type 2 diabetes.
3- In some studies, cinnamon has shown an amazing ability to stop medication-resistant yeast infections.
4- In a study published by researchers at the U.S. Department of Agriculture in Maryland, cinnamon reduced the proliferation of leukemia and lymphoma cancer cells.
5- It has an anti-clotting effect on the blood.
6- In a study at Copenhagen University, patients given half a teaspoon of cinnamon powder combined with one tablespoon of honey every morning before breakfast had significant relief in arthritis pain after one week and could walk without pain within one month.
7- When added to food, it inhibits bacterial growth and food spoilage, making it a natural food preservative.
8- One study found that smelling cinnamon boosts cognitive function and memory.
9- Researchers at Kansas State University found that cinnamon fights the E. coli bacteria in unpasteurized juices.
10- It is a great source of manganese, fiber, iron, and calcium.

Well, my fellow bloggers, now we know already cinnamon is good for our health right? ;)

Here my super duper easy recipe that i got from Mat Gebu blog, Crunchy Cinnamon Roll. I made several small changes on it. I added raisin into the brown sugar mixture ( He used brown sugar and cinnamon powder only).

CRUNCHY CINNAMON ROLL

Ingredients: (24 rolls)

4 sheet of KAWAN brand roti pratha (divided into 8 pieces)
1/3 cup brown sugar
1/2 tsp cinnamon powder
1/2 cup raisin

Method:
1- Pre-heat oven to 180'C for 10 minutes (mine small oven)
2- Divide the pastry into 8 pieces.
3- Spoon the brown sugar and sprinkle onto the pastry. Add 1 tsp of raisin.
4- Roll the pastry.
5- Bake for 8-10 minutes until golden brown.(actuall recipe bake fo 20-25 minutes,depend on ur oven size)

Strawberry puff with almond

Frankly speaking i'm down rite now. May DLSR camera (my BB) is not with me. Too bad because i can't snap my foods . I sent my DSLR camera to the Nikon center and they said at least 3 weeks to repair it. Next wednesday is the 3rd week, so i hope i can get my BB soon :)
Beside that somebody who closed with me is sick rite now. He was admitted to the hospital because of slip disk. I knew he is under stress and sad because of the ilness...what make me really sad is he totally refused to allow me visit him at the hospital.I was visited him once on last week and after that he really don't want to see me..what should i do?? what did i do until he treat me like that.I'm really miss him. Now i pray hard to God so that he'll recover from his illness..amin...
Today to release my tension i made  Strawberry puff. I adapted the recipe from other blogger, Mat Gebu. Walla, i didn't knw it's so easy to make it using ready made puff. At first i wanted to make an apple filling but unfortunately i don't have the fruit so i just used my strawberry jam and almond flakes.So here the recipe.

Starwberry puff with almond.

Ingredients: [10 pieces]

1 pack of ready made pastry ( i used KAWAN brand )
strawberry jam
2 tbsp almond flake
sugar icing

Method:
1- Heat the oven to 200'c in 10 minutes.
2- Cut the pastry sheet into 2 sheet. One piece you just leave it but the 2nd pastry sheet you cut a square shape in the middle, looks like a frame (to add strawberry jam)
3- Paste the 2nd pastry sheet on top of the first sheet. Use egg yolk to paste it.
4- Spoon the strawberry jam onto the middle (frame) of the pastry sheet.
5- Bake for 10 minutes first. After that take-out from the oven , brush the pastry with egg yolk, sprinkle with almond flake and bake for another 10 minutes in the oven.


Love the smell of strawberry when i'm down...what a nice aroma~~~
